What you should know about Luwombo | the cooking schools in Kampala
Luwombo is a traditional dish from Buganda, in which a stew of beef, chicken, mushrooms, fish or ground nuts is steamed in banana leaves. Luwombo is a brilliant method of the Baganda to make sauce organically with a special aroma while retaining the natural ingredients of whatever is being cooked. Very young banana leaves which have recently come out and with no tears are cut, passed over fire to soften them. The passing of banana leaves to fire brings the aroma found in the sauce steamed. Then it is covered with the banana leaves (as many as necessary), to cause the pressure that helps the sauce to cook quickly and tenderly. The Luwombo is a very highly respected way of cooking by the
Baganda, and it is mostly cooked for Bako (son in law), introduction ceremonies, and other traditional Mikolos (traditional functions).
Luwombo is steamed under pressure, whereby it is put in a saucepan that is first lined in the bottom with a suitable level of “midribs” from the banana leaves to stop water from getting into the Luwombo.
